AVICIDEŽEP is control bacterial infection during fermentation as ethanol producers understand all too well, bacterial contaminants not only compete with yeast for nutrients during fermentation, but also produce lactic acid and other organic by-products that inhibit yeast activity. Lactic acid is an undesirable by-product of alcohol fermentation and can stop or seriously retard the metabolism of carbohydrates into alcohol by yeast. Lactic acid bacteria (such as Lactobacillus sp.) are the most common type of gram positive bacteria that produce such detrimental lactic acid, consume sugar otherwise available for ethanol production, and produce enzymes that modify fermentation conditions.
